Preparation:

    Slice beef as thinly as you can on the bias (on an angle), OR have your local butcher/deli do this for you. Stir together the soy sauce and brown sugar (1 tsp.) and pour over beef. Stir well and set aside to marinate.

    Boil noodles until just under-cooked, as they will finish cooking in your wok. Drain and rinse with cold water.

    Combine all Stir-Fry Sauce ingredients in a bowl. 

    Heat a large wok or frying pan over medium-high heat. Add 2-3 Tbsp. oil and swirl around, then add the shallot, garlic, ginger, and fresh chili (if using). Stir-fry 1-2 minutes, then add the beef together with its marinade. Stir-fry 3 minutes, or until beef is lightly cooked. As you stir-fry, add a little stir-fry sauce (2-3 Tbsp.) - just enough to keep ingredients frying nicely.

    Add the carrots and a little more stir-fry sauce if needed. Continue stir-frying 1-2 minutes. Then add mushrooms, broccoli, and red pepper. Stir-fry until vegetables have softened but as still bright with some crispness to them (again, add more stir-fry sauce as you go, but not so much that you are 'boiling' the ingredients).

    Finally, add the noodles plus all remaining stir-fry sauce. Using 2 utensils, gently fry everything together by turning the noodles in the pan. The noodles will absorb most of the sauce and finish cooking (4-6 minutes).

    When noodles are cooked and most of the sauce has been absorbed, switch off heat and taste-test. If not salty enough, add more fish sauce or soy sauce. If too salty for your taste, add a squeeze fresh lime or lemon juice. Add more chili for more spice.

    1 can coconut milk

    2-3 Tbsp. minced fresh lemongrass, OR bottled/frozen prepared lemongrass

    1 shallots OR 1/4 cup purple onion, sliced

    1 thumb-size piece galangal OR ginger, grated

    4-5 cloves garlic

    1-2 fresh red chilies, sliced, OR 1/2 to 1 tsp. cayenne pepper, to taste

    2 Tbsp. tomato ketchup or cooked tomato puree

    2 Tbsp. fish sauce

    1+1/2 to 2 Tbsp. chili powder, depending on how spicy you want it (North American chili powder from the supermarket)

    1/2 tsp. ground cumin

    1/2 tsp. ground coriander

    1 Tbsp. brown sugar, + more to taste

    1 tsp.shrimp paste

    2 Tbsp. fresh lime juice

Preparation:

    Preheat oven to 350 degrees. Then place chicken pieces in a fairly large casserole dish.

    Place all curry sauce ingredients in a food processor or blender. Process well. Pour the curry sauce over the chicken. Add the chopped eggplant (if using), plus kaffir lime leaves/bay leaf and cinnamon stick, mixing everything into the sauce. Cover and bake 45 minutes at 350 degrees. Note: if you prefer more sauce, add 1/4 to 1/3 cup good-tasting chicken stock. (If you prefer to cook this curry on your stovetop, see instructions below.)

    Remove dish from oven. Add the bell pepper and tomato, stirring them into the sauce. Return curry to the oven for 15-20 minutes, or until both chicken and vegetables are well cooked.

    Do a taste test, looking for a balance of flavors. If not salty or flavorful enough, add up to 1 Tbsp. more fish sauce. If too salty, add more fresh lime juice. If too sour, add a little more brown sugar. If too spicy, add more coconut milk. If not spicy enough, add a few fresh-cut chilies or dried crushed chili/cayenne pepper.

    Ladle the curry into a large serving bowl. Sprinkle generously with fresh basil and coriander (cilantro), and serve with plenty of Thai jasmine rice. ENJOY!

*Stovetop method: To cook this curry on your stovetop, simply combine sauce and chicken pieces (plus lime leaves, cinnamon, and cumin seed) in a wok, deep frying pan, or large pot. Bring to a gentle boil. Reduce heat to medium-low, cover, and simmer 30 minutes, stirring occasionally. Add the vegetables and continue simmering another 15 minutes, or until both vegetables and chicken are cooked. Follow recipe above for finishing the dish.

When you squeeze a handful of the mixture, it should form a ball. Shape the dough into a round disk, wrap it in plastic, and refrigerate for at least 1 hour.
    Toss the sliced apples and pear with the orange juice. Whisk together the brown sugar, cinnamon, nutmeg, cardamom, and cornstarch. Toss the fruit with the sugar-spice mixture and set aside.
    Preheat an oven to 375 degrees F (190 degrees C). Set out an 8-inch tart pan, or, if you'll be making a free-form tart (galette), lightly grease a baking sheet.
    Roll the pastry out on a lightly floured work surface to form a 10-inch circle. Transfer the dough to the tart pan or baking sheet. Arrange the fruit decoratively in the tart pastry. If you're baking the tart on a baking sheet, leave a 2-inch rim of dough and fold it up over the edge of the fruit (the pastry folds will overlap).
    Bake the tart in the preheated oven until the crust is browned and the filling is bubbly, about 30 minutes. Remove the tart from the oven and brush it with the apricot jam.

    1 cup crunchy peanut butter

Directions

    Cream together butter, peanut butter and sugars. Beat in eggs.
    In a separate bowl, sift together flour, baking powder, baking soda, and salt. Stir into batter. Put batter in refrigerator for 1 hour.
    Roll into 1 inch balls and put on baking sheets. Flatten each ball with a fork, making a criss-cross pattern. Bake in a preheated 375 degrees F oven for about 10 minutes or until cookies begin to brown. Do not over-bake.

Dr. James Gladstone, a knee specialist at Mount Sinai Hospital in New York, who is not involved in Stoudemire’s diagnosis or treatment, said such a procedure, known as debridement surgery, would both clean the knee and look for any other major damage to the soft or hard cartilage there.

Gladstone said that if there was more damage to the hard cartilage in Stoudemire’s knee than expected, he could miss even more time. “If you clean up the stuff that’s dangling or floating in his knee, the damage in the cartilage is still there,” he said. “If hard cartilage is the problem, more might have to be done.”Even though Stoudemire is just 29, considered the prime of an N.B.A. player’s career, his knees and his coming to the pros straight from high school have made his body older than that.

In 2005, Stoudemire underwent microfracture surgery in his left knee. He also had arthroscopic surgery on his right knee in 2006.Entering his 11th season, Stoudemire has appeared in every game in a season just three times in his career, all with the Phoenix Suns.
